Peanut Butter Butterscotch Cookies Recipe

Good Morning All! I have a simply DELICIOUS Cookie Recipe for you today, and of course a great recipe for some delicious scrapping!

How perfect are these bags from Talking Twine and Trim?

Recipe: Yields 48 Cookies

2 1/2 Cups All purpose Flour
1 1/2 teaspoons Baking Soda
1/2 teaspoon salt
1 Cup Peanut Butter
1 Cup Butter
1 Cup White Sugar
1 Cup packed Brown Sugar
2 Eggs
1 teaspoon vanilla extract
1 1/2 Cup Butterscoth Morsels

Pre-heat oven to 375 degrees F. Sift together flour, baking soda, and salt; set aside.

In a medium bowl, cream together butter, peanut butter, white sugar and brown sugar. Beat in egg, then fold in vanilla. Mix in dry ingredients 1/2 cup at a time until smooth. Fold in butterscoth morsels.

Refrigerate 20 minutes. Roll into 1 inch balls and space 2 inches apart on a cool ungreased cookie sheet.

Bake for 10-12 minutes depending on your climate and oven. Let cool on cookie sheet ( approx 5 minutes) before transferring to cooling rack.
